The Rosella plant (Hibiscus Sabdariffa) is entirely edible. The hero, however, is the Calyx. After flowering, it grows in to a fruit with a tart raspberry taste and is delicious to use in salads and savoury dishes or beverages.
Similar to Rhubarb or Raspberry the red pigment, aside from providing a great source of Vitamin C and Antioxidants, will colour water making a fun fruit or powder to use in cocktails, smoothies and teas, fruit compotes, chutneys, jams, desserts and garnishes.
